Apple-Nut Bread

2 eggs

1 cup sugar

1/2 tsp vanilla

2 cups unbleached all-purpose flour

1 tsp baking soda

1/2 tsp sea salt

1/2 tsp ground nutmeg

1/2 tsp ground cinnamon

1/2 cup canola oil

2 TBSP sour cream

1 cup peeled, chopped apples

1 cup coarsely chopped walnuts

Pre-heat oven to 350*F. Lightly grease a 9x5x3″ loaf pan and set aside.

Beat eggs, sugar and vanilla in large mixing bowl until light and fluffy. Sift flour with baking soda, salt, nutmeg and cinnamon. Add to egg mixture alternating with oil and sour cream, beating well after each addition. Stir in apples and nuts and spoon into prepared pan. Bake for 1 hour. Cool in pan on wire rack 10 minutes. Remove from pan and cool completely on rack.
