Banana Bread

{this recipe came from my moms kitchen}

1/2 cup butter

1 tsp vanilla

1-1/3 cup brown sugar, packed

2 eggs

2 cups unbleached all pupose flour

1 tsp baking soda

1/4 tsp sea salt

1/4 cup buttermilk or sour milk

1 cup mashed bananas

1/2 cup chopped nuts (optional)  I didn’t have any today.

Cream together the butter, vanilla and sugar. Add eggs and beat thoroughly. Stir in sifted dry ingredients alternately with milk and mashed bananas. Mix until smooth. Stir in nuts. and bake in a greased 5×9″ loaf pan for 50 – 60 miutes in a 350*F oven.  I usually cover it loosely with foil for the last 10 or 15 minutes so it doesn’t get too brown or burn on the top.
