Pastry for 9″ – 2 crust- Pie

2 cups sifted unbleached all purpose flour

1 tsp sea salt

2/3 cup shortening (add 2 TBSP if using hydrogenated shortening)

1/4 cup cold water

Sift together flour and salt. Cut in shortening until shortening particles are the size of giant peas. Sprinkle with water, mix with fork.

Round into ball, divide in halves. Roll out one half on lightly floured surface 1″ larger than inverted pie pan. Ease into pan.

Roll out other half the same way.

Make 3-4 slits near center of top half, and put on top of pie.
