Zucchini Bread

            {This recipe came from my mom’s kitchen}

1 cup grated unpeeled zucchini

1 cup sugar

1 egg

1/2 cup canola oil

1 1/2 cup unbleached all purpose flour

1 tsp. ground cinnamon

1/2 tsp. sea salt

1/2 tsp. baking soda

1/2 tsp. nutmeg

1/4 tsp. baking powder

1/4 tsp grated lemon peel

1/2 cup chopped walnuts

In a mixing bowl, beat zucchini, sugar and egg together. Add oil, mix well. Stir together flour, cinnamon, salt, soda, nutmeg, baking powder and lemon peel. Stir into zucchini mixture. Fold in nuts. Pour into a geased 8 1/2 x 4 1/2 x 2 1/2″ loaf pan. Bake at 325*F till done for 60-65 minutes. Remove from pan. Cool loaf thoroughly. Wrap and store overnight before slicing.
