Stuffed Acorn Squash

Ingredients:

olive oil

6 oz lean ground turkey

1/4 cup chopped celery

1/4 cup chopped onion

1/4 tsp sea salt

1/4 tsp curry powder

1/2 cup unsweetened applesauce (homemade is great)

1 slice raisin or whole wheat bread, cubed (3/4 cup)

dash or two of ground cinnamon

Directions:

Grease baking dish with a little olive oil, halve the squash, discard seeds, put

cut side down on dish.

Bake uncovered at 350*F for 50 min. (watch it, sometimes it doesn’t take as long, depending on how large the squash is).

Meanwhile, cook turkey, celery and onion in skillet with a little olive oil (don’t cook it high if using extra virgin oil)  Drain off fat. Stir in seasonings, cook

1 minute more. Stir in applesauce and bread cubes. Turn squash over in dish, put

stuffing mix in squash halves, bake 20 minutes more uncovered.

(This year I am going to add a little bit of fresh diced apples too)

 

   *This is my favorite Thanksgiving side dish. I created it about 3-4 years ago from another recipe that wasnt so healthy.

     A lot of times stuffing bothers my stomach, but this one doesn’t.
