Vegetable-Beef Barley Soup

slow cooker – approx. 9 hours

10 servings

1  1/2 pound beef stew meat

1 small bell pepper, chopped, 1/2 cup

3/4 cup chopped onion

3/4 cup 1″ pieces fresh or frozen (thawed) green beans ( I use the equivalent of carrots-I am not   crazy about green beans in soup)

2/3 cup uncooked barley

2/3 cup fresh or frozen (thawed) whole kernel corn

1  1/2 cups water

1 tsp sea salt

1 tsp chopped fresh or 1/2 tsp dried, thyme leaves

1/4 tsp pepper

14 oz beef broth

14.5 oz can diced tomatoes with roasted garlic, undrained

8 oz tomato sauce

In a 4-5 quart slow cooker, mix all ingredients. Cover and cook on low heat setting 8-9 hours.
